    Soy: It is not just for vegetarians

    The soybean is used in the producton of a wide variety of products, including food, ink, cosmetics and cooking oil. In 2008, Minnesota had the third largest crop of soybean area planted in the country, preceded by Iowa and Illinois. Here in its “Fields of Energy” DVD series, the Minnesota Department of Agriculture highlights the many uses for this versatile crop while focusing on the use of soybean oil as fuel to reduce foreign energy dependency.
